I've posted a set of water movement shots on my fotothing account - http://www.fotothing.com/jplyman/ - The above shot is my favorite of the bunch. As you can see from fotothing, I have this issue with including too much sky in the shot. Something to work on :) But this picture has almost all water and I love the way it came out. Clicked just at the right time!
Good Jen... right... avoid sky! Also, try photographing at dusk so you can drag the shutter speed out to 10-30 seconds or so @ f22.... You can also pick up one or more neutral density filters inexpensively... They cut down the amt of light so you can make longer exposures...
